This is the healthy version of no-bake cookies. No-bake chocolate cookies have always been my FAVORITE! My mom usually made them around Christmas time, but over the past few years, my family has changed their diet so now she makes a healthy version of them.
Sometimes I’ll eat a couple for a quick breakfast, after I work-out, or in the evenings if I am hungry before bedtime. Breastfeeding makes me hungry all the time, so these are a great go-to!
(Sorry the pictures aren’t prettier… these are difficult to photograph and make pretty haha)
1/4 cup of coconut sugar
2 Tbsp of almond milk, coconut milk, or you can use half n half ? really any kind of milk
3 Tbsp of coconut oil
2 Tbsp of cocoa powder or cacao powder
1/2 cup of unsweetened shredded coconut
1 cup of rolled oats
1/3 cup of peanut butter or almond butter
1/2 tsp of pure vanilla extract
A pinch of salt
Line a baking sheet with parchment or wax paper
Add coconut sugar, coconut oil, milk and cocoa powder in a medium sauce pan and bring to a low boil over medium heat stirring frequently.
Once bubbling, let boil for one minute and then remove from heat. Add peanut butter, oats, coconut, vanilla and salt and mix to incorporate all ingredients.
Drop heaping tablespoons on the baking sheet and then move to freezer.
Once hardened, you can keep them in freezer or fridge.
I hope you enjoy them as much as my mom and I do!
