I am so into a fresh piña colada right now. It is definitely my drink of choice for the summer…well, second to these babies. Pineapple and coconut are two of my favorite flavors so you put them together and it’s all the heart eye emojis for me. And honestly, it’s quite impossible to drink a piña colada and not at least somewhat feel like you’re somewhere tropical. So if I can’t go to a tropical destination this summer, at least I can drink like I am there right? 😉
A few weeks ago when we went to the beach with my family, I made it my mission to make the perfect piña colada. I wanted it to be easy to whip up with a few ingredients, not too liquidy, but also not too thick, and delicious! I looked at several recipes online and with the help of my sister, I think I finally got the perfect recipe down! So here you go….
The Easiest Piña Colada You Will Ever Make
1 large pineapple
1 can cream of coconut (coco lopez or coco goya)
1/4 cup dark rum (I use Bacardi)
2 scoops vanilla ice cream
whipped cream and cherries for topping!
Step 1: Chop your pineapple into 2″ chunks with the core cut out. I haven’t tried this, but I might try chilling the pineapple the next time after chopping it but before putting in the piña colada.
Step 2: Add the pineapple, can cream of coconut and rum to the blender and blend together.
Step 3: Add two scoops ice cream and blend. I like my piña coladas sweet and creamy, not soupy. The ice cream helps add some thickness to it!
Step 4: Pour into a glass and top with whipped cream and garnish with a pineapple slice and cherry! Enjoy!
